Ingredients
3 cups self raising flour
11/2 tbsps icing sugar (secret ingredient)!!
(NOT castor sugar, or raw sugar, makes damper light and fluffy!!)
1/2 tsp salt
water approximately 1 cup, enough water where the mixture will follow your mixing knife while mixing it (will make sense later)
Preparation
Step One
Add all dry ingredients into a large mixing bowl, mix lightly using a blunt edged knife (eg butter knife)
Step Two
Add small amounts of water at a time and slowly mix with knife. You know you have enough water when you are mixing the ingredients, the ingredients start following the knife in a big ball. You want to ensure you do this step slowly.
*optional add chocolate chips, raisins, bacon, cheese etc to flavour the damper

Step Three
Preheat airfryer to 180 degrees
Step Four
Sprinkle a small layer of flour onto the base of the airfryer.
Take out the damper mixture from the bowl and shape with your hands into a large damper shape. DO NOT KNEAD, you will take out the air from the damper if you do.
Place into airfryer and with the knife add deep lines across the top that will rise and indicate slice lines once cooked (refer to video for reference)
Sprinkle a light layer of self raising flour over the top of the damper.
Step Five
Cook for 25 minutes at 180 degrees, then brush the top of the damper with butter, continue to cook for a further 3-4 minutes until golden brown on the top.
All times with vary with different airfryers, so you will need to adjust accordingly.
Take out and place on chopping board while it cools. We highly recommend warm damper with butter and drizzled golden syrup!! YUM
